Packed with nutrition! If you have beets you didn't pick, move them (if needed) and grow tons of beet greens for the cool season. Cut the beet leaves back, amend the soil, give them a good feeding and in a couple weeks the greens will start coming. They a great for the cool season in taste and they can handle a light frost. wish I had some left over beets. I have 2 huge raised bed that have been solarized and are empty.

I never thought about relocating them. Mine were very bitter because they were stressed by dry soil, i shouldn't have pulled them out. :D

This year my beets produced lot of greens and the roots did not grow big. Those grew to the size of a lemon. Is there anything that I should do in particular.

The taste of the veg will b reflected by the quality of the water that u feed the plants, like pure rain water vs tap water fed. If your taste buds r highly sensitive, u can tell the diff. I can see fish emulsion effecting the taste. If u use it often or later, u prob taste something slightly diff vs plant that hasn't been fed.

I just harvested greens from a few big beets. Tons of shoots coming out of them. Had them in a shrimp stir fry a few nights ago. This batch I will boil with kale, collards and smoked turkey.

Great idea. I have a lot of beet green leaves still in my raised beds, here in Canada. They grow so much better than the Swiss chard without the beets.
