We have made pesto with carrot tops. We thought that it was delicious. We have also made pesto from celery leaves and from radish leaves. The pesto from radish leaves can be a bit strong and spicy. Pesto can be frozen! :)

It seems many gardeners do not thin (it's sooo tedious!). Carrots planted too close compete for water..This results in hairy carrots sending out roots for water. Some of the best carrots I have ever grown were in the spring, in loose soil, and watered lightly for 15 minutes everyday. They were big, smooth, and sooo yummy! :) The seeds were from Baker Creek of course!

Great vid! When do you thin usually? I've heard it's when the plant tops reach 4 inches tall, but that seems too soon in my opinion..
