In this video I show how I can (without a pressure canner) yellow crookneck squash for frying later. Most of us agree that there is not a good way to preserve summer squash, so that it will taste good later when we want some fried squash. I have canned okra this same way and decided to try canning summer squash. It turned out pretty good, but of course, not as good as fresh squash. Hell OAG, I have a very very important question!! I have 1 gallon packed tight. it has worked down to the bottom of the jar. The problem is I did this in 5 one gallon jars in 1993, yes I said 1993. they have been completely sealed, never opened. Are they too bad now? Should I find a way to dispose of them? I was also wondering if I could pour some of it around my gardens to ward off ground Hogs. I have whole families living here and adjoining neighbor property too. They have eaten almost everything. I am to the point that I should level it all and call it quit. Please, your advice would be greatly appreciated. I love your videos I have told you before because you are so good. Yes, looks like a mini-pickling event, without the herbs. Vinegar pulls out excess water and toughens up the product, while salt pulls excess water, ... and both are antibacterial for safe canning. Wonder how long these will last and still be great tasting. Tx for the vid. Good info.

Good way to keep your squash after harvesting if you dont want to use it for a few days.. Love squash!!

That's genius! I never thought of cutting out the seeds. Prob keeps it from being so mushy. I am going to try this. I don't fry it but I sauté but I think it would work the same. You did refrigerate the jars did you? The seal is sufficient correct?
