Actually the highest concentration of capsaicin is found in the white pith around the seeds. The seeds are hot because they are in the flesh, but not actually the hottest part of the pepper.

I've held and messed with all kinds of hot peppers including some of the hottest in the world and touching them with your hands is not going to hurt you. You are putting them on your tongue. Don't you think it's going to harm your tongue more than your hands?

How long will a pepper plant bear fruit for? is it kind of a one shot thing then it dies? (growing a normal thai chili plant)
Also, what do the seeds look like once dried? Mine turned kind of black around the edges. (Jalapeno seeds)
