Another tip from http://www.PizzaHomeChef.com. Harvest basil several times a summer and keep it for years to use in recipes, such as pizza sauces and pestos that require basil. Just pick the basil leaves you want to use later and place them in a ziplock bag. Add a small amount of olive oil. Gently press the leaves flat in the ziplock bag until the leaves are coated with the olive oil and all air has been removed. Zip the ziplock closed and freeze immediately. The olive oil not only protects the basil leaves from freezer burn or drying out, but the oil is infused with the essence of the basil, which is great as a cooking ingredient itself. Your basil will grow back several times through the growing season. So if you regularly harvest and save your basil this way, you will get a lot more basil every year and have it to use whenever you need it. This is also a great trick to use when you've bought more basil than you need for your recipe or just find basil on sale and want to take full advantage for years to come.
