after I collect my seeds and put them in an envelope I like to put them in a mason jar with rice and just leave the lid loose seems to help a lot with moisture

Shouldn't you dry them immediately? I mean, if you leave them wet, won't they germinate?

You don't need to rinse them, just carefully rub each seed (unless you need 100's) against a soft paper towel to remove the gel surrounding the seed and leave them to dry completely. Store them in a small glass jar. Keep in mind that all the tomato plants you'll get from these seeds will be different varieties of the tomato you picked the seeds from. My "Sungold" tomatoes turn out different in size, colour and taste, so if you want the original I guess you'll have to buy new seeds.

Why didn't you clean them right from the fruit rather than drying them and re-wetting them?

You should use something sharper than a butter knife.
Cajun was made for tomatoes. Forget salt, maybe not altogether but Sprinkle Cajun on some tomatoes and you wont ever look back. -
