Lavender seeds store just fine under the proper conditions. Let them dry out and then put them in a resealable baggie, like a stamp bag, and put them away until next season. Like most seeds, they lose about 10% vitality per year when stored this way. The only problem is if you don't let them dry out enough before storage; just like any other seed, they'll mold.
