I've found seasoning them with summer or winter savory does reduce the 'wind' effect.

Started growing these after seeing a giant thicket at RHS Hyde Hall a few years back, and having picked up some tubers half price in local supermarket, set to sticking them in a spare 4' of bed. They tower overhead with lovely sunny flowers late Summer. Beautiful. From those 3 shrivelled fingers I've regularly cropped entire large trugs-worths,and they make fantastic 'chips' as well as a nutty mash or soup. Great channel with some great tips btw

Thanks for sharing your video with me. I've been growing these plants for years and yes, they're so easy to grow--no pampering needed! I dig up the tubers in fall but also in early spring (after the ground has thawed,before their leaves appear.). At that time, I find them to be sweeter & they cause less digestive problems. They do spread & need to be contained but they're a welcome addition to my root crops. Here in the United States they're sold as "Sunchokes."
