It is ok if your food sticks out of the liquid?

I have a Mirro 23 quart and a Presto 23 quart pressure canners. They both have a weight that has 5-10-15 weights which you change by turning to the proper weight. 15 pounds here. Can I replace those weights with the type you have!

I hate to say this , you or i myself are using the pressure cooker caner slightly out of specks. I have been canning for over 50 years and mostly with the pressure cooker caner. I do deer meat mostly. I HAVE READ THE INSTRUCTIONS AND HAVE BEEN WATCHING OTHER SHOWS ON HERE AND THEY ARE DOING IT THE WAY I FEEL SURE I HAVE READ A LONG TIME AGO. AFTER YOU LET THE PRESSURE STEAM FOR THE 10 MINUTES , PUT THE WEIGHT ON IT AND WHEN IT GETS JIGGLING THE WEIGHT YOU TURN DOWN YOUR HEAT AND ADJUST THE JIGGLING DOWN SO THAT IT JIGGLES A SMALL BIT ABOUT EVERY 10 SECONDS. THIS WILL SAVE YOU HEATING ENERGY AND DO THE JOB. IT WILL KEEP THE PRESSURE CONSTANT. RUNNING IT AT FULL BLAST AND JIGGLING IT THE WHOLE TIME IS JUST WASTING ENERGY !

Just one question about using the canner, I don't own one unfortunately and I was wondering if I could just use like a deep heavy pot instead?? -

You mentioned doing this as a job....you could actually hold classes in your home and charge a small fee for each person. You would want to make a disclaimer but you could certainly turn it into some extra cash by inviting some people into your home and doing the same thing you do in your videos. Thanks for posting! Great video. I have shelved an out side garage for canning purposes and storage. How do I PREVENT MY RINGS FROM RUSTING.
The garage is clean and dry with no window.,BUT the atmosphere gets cold and damp in the winter time, hence the rusting of the rings Are YOU storing your canned goods inside your home?? I live in the Scottish Highlands and we get a lot of snow and hard frost in Winter. Temps falling to23 degrees Can you think of anything that will help this problem??? Sometimes the lid also has rust spots on them.

Linda, I have learned more from your videos than in all of the reading that I've done. Your are a classic. The video presentations not only give an aspect of what you're doing, but actually capture the whole process. Nothing could be better for a neophyte. I have only done hot onion garlic dills which got rave reviews. Looking forward to much more. Such fun and a feeling of accomplishment. Keep up the great work, princess.

I have been snapping beans for an hour to can when this popped up in my recommended! :D Thanks for sharing, I love watching you can stuff and it really helps me learn and settle my mind before a big canning session.

I have a question about the pressure canner please. You said to let it steam about ten minutes before you put the weight on it. then you start your time? And the second question was ---- You don't take the weight off of the canner after your processing time is done you DONT TAKE THE WEIGHT OFF? YOU LET IT COOL DOWN? Does it take forever to cool down?
I ended up taking my weight off of mine and then the extra button on the top came down and I waited ten mins and was able to get the jars out but, is this a bad thing? than you for your time. -
