A bit of advice... You don't want to save seeds from plants that have undesirable characteristics, such as bolting early before reaching maturity.

I am harvesting my beets this weekend. I did half the beets 2 weeks ago. 14 qts of beets and 12 pints of pickled beets. Hopefully I will get 14 more qt and I will not have to buy any beets at all. Beets are so a beautiful color. I would like to try golden beets next year for fun. My neighbor takes all the beet greens to eat. She loves them.
