Hello
I live in a country on the equator called Trinidad. In the garden I believe that I have a plant called Celosia cristata[1] also known as cockscomb.
I require help in identifying if a plant I have is Celosia cristata.
I require help in determining how to use the plant. For example which parts of the plants can be used, how they can be used and when to use by.
I am particularly interested in finding out how the flower is cooked.
If any pictures are required I can put these on you tube for viewing.

Beautiful garden although a pretty tedious video to watch....

You said you didn't plant it, it just started growing by itself. Do you know how it got there? I ask because I have been growing mine for a few years. I have no idea how the first one got in my garden. It just started growing. Now I have to control how many grow because they almost take over. Also what is the easiest way to deseed these monsters?

Amaranth may be the next commercially grown grain. It is highly nutritious.
