It's a funny one, but most Americans do pronounce it "erbs" while I like most in the UK do pronounce it hERBS... The true way to pronounce the letter "H" though is "ach" ...which is weird. And most often words with the annunciation of "H" is dropped. But "erbs" does amuse me some what :) hehe :)

can herbs grow under artificial light? or does it have to be a UV light

Basil, chives, parsley, thyme, coriander. there are probably more small 'erbs' that you could grow in the kitchen. i reckon tall and big leaved plants would be diffiult.
