there are 2 types of cassava in my land. the cassava with the green leaf stems is bitter and causes stomach cramping. the cassava with the pink leaf stalk doesn't. another thing I've noticed with the pink leaf stemmed cassava is that when it flowers the cassava roots are huge!

You sound like some shady plant tinker and I absolutely love it, thanks for the video.

Hello, there are many quetions on how to cook casava. So here a few ways on how I leared to cook it/ use it in Central America/ cCaribbean Coast of Nicaragua.
You can just boil it or fry it (casava chips) as you do it with potatoe. Also cooked and refried it is nice.
As mentioned from some others before, it is very imprtant to cook it in any kind of way. DON'T EAT IT RAW as it contains cyanide in the raw state.
You can also make "cassava cake", which is a kind of pudding/ custard. You grate the casava when it is raw to a mass. Then you put cockonut milk as well as sugar and spices, such as fresh ginger, cinnamond, nutmeg. Boil it on low heat and stir frequently. Once it it a sticky mass, put it in a bowl and let it cool. Once it is cool you can cut it in slices.
This can be done as well with corn meal, quequisque and dasheen (malanga). Hope you like some of it! Bon appetit! -
The leaves can be cooked the same way as taro leaves with beef/fish and coconut milk
