Growing Beets from Roots: Beet Greens are Edible!

This is an Organic Touchstone Gold Beet that I decided to grow so I may acquire some organic seeds in the future. Upon looking up some info, I found out that the leaves are edible as well! Is it just the greens or do new beets grow at the root?

why would you not want those accidental worms? it's like getting free labor! They will help fertilize and aerate the soil :)

while you're growing the leaves out to harvest seed, can you pluck a few off and (how would you ?) to eat ?

The leaves are the best parts. Sautee the leaves in olive oil or bacon fat with onion or garlic. I usually cut the bottom 2/3 of the root off and eat that. The top third gets planted and I eat the greens for a few months or so. Sometimes the new root that develops is worth eating sometimes not.

This is not a waste but a nice investment! ;-) I'm going to try this. Thank you for sharing.

Try adding "Azomite" which is the product of a 30 million year old volcanic eruption in Utah. It has trace amounts of all the minerals necessary for a plant to sustain life.It doesn't burn the plants and doesn't take much to see results. If you you this you will have juicer beets, that are more heat, cold, and pest tolerant.The mature leaves will also stay tender as if they were young. This will also increase aid germination of seeds.Azomite also make a great vitamin supplement/detox in water

You need another beet flowering to pollinate and make seeds. But if you start another one now, it won't flower at the same time. So you should start again with at least 2 beets so they will flower at same time. Even so, depending on the variety of beet, the seeds may not be true to the parents. Also, beets can cross-pollinate with chard and other beet species, so make sure no other plants in this species are flowering nearby at the same time, or the seeds will be hybrids. watch?v=K6sIfyqjeww

I started it indoors, but it's been outside for a few weeks. Maybe it's still adjusting? Anyways, I went outside today to check on my other plants, it's my first year gardening, and this fat caterpillar managed to eat a bunch of my pepper plants. I'm so mad! And there's little tiny black specks of bugs on everything else. I don't think this gardening thing is for me. Lol!

Thanks! I have these beets growing in my patio. They are getting indirect sunlight and mostly shaded from the harsh sun. Soon, I will transplant it in a bigger container and have it growing in direct sunlight. I currently don't have anything growing in 'artificial lights'. :)

@kbbacon Yes, Kevin, worms are good. For fishing and soil, but not on my hands! Lol.

@GummyTumor It might have to do with the amount of light it's getting which is not enough. Plants get all "leggy", trying to look for some light source. Are you growing it indoors?

Have you grown beets from seed before? I tried growing some of the red ones and they sprouted, but then they got all lanky and fell over on their sides. I'm thinking I have to bury them further down into the soil and cover the stems. Any advice?
