Knowing when to harvest garlic can be a bit tricky! This video details both when and how to harvest your garden crop of garlic. In this edition of Grow what you Eat, Eat what you Grow we talk about when to harvest garlic. I talk about 2 different ways to know when it is about time to harvest your garlic. The first is by looking at the leaves. When the bottom set of leaves has turned brown and dried up completely then you are about 2 to 3 weeks away from harvests. At this time you should stop watering your garlic, to give the bulbs a chance to dry out and mature. The second method for know your garlic is ready only works on hard neck varieties. Earlier in the year when you are harvesting the garlic scapes from your plant you should leave one on. When that scape is standing up straight and has a seed head, then it is time to dig your plants. When harvesting garlic be sure to dig them out with a shovel or digging fork. Never pull them from the soil as this can damage the bulbs and affect how long your garlic will last in storage. his video comes to you from Rick Stone and the blog Stoney Acres. how to you tell the difference between the hard neck and the soft neck?

Good info. We just harvested ours a little late....ok...maybe a lot late. But I think we saved it just in time. some were pretty wet (it had also recently rained). Some we had to do stuff with right away like make powder.
We grew 3 kinds this year. A total of about 160 bulbs I believe (and harvested close to that many). All Hard necks. 1) Xian 2) Asian Tempest 3)Amish Rocambole. We planted about double the Amish one as the other 2. The other 2 were done quite a bit before the Amish. So we harvested those on time no problem. Then we kind of "forgot" about the Amish kind...then went camping...etc...lol. When we got back we jumped through hoops and pulled it. I think if we would have waited longer....we would have lost the Amish kind. But it is currently hanging in the barn and drying very nicely.
We do have a recent video up of us harvesting the first 2 kinds on the same day and my wife doing her fist garlic braid :) It was all fun. Keep in mind if you watch....just like any of our videos....we really have no idea what we are doing. Our videos are NOT hot to videos LOL :) - Mike -
This is very timely for us, thank you! Was wondering if our garlic is done or not. Love the trick, however it is to late for me, I harvested them all. Maybe next year.
