What she's referring to as "stems" are actually PETIOLES and you CANNOT normally get a viable new plant from a petiole even with roots attached. It's easier to divide hostas in early spring when the young shoots are just starting to come out. So, do what she demonstrated here and just make sure each division has several shoots and roots attached together. This part of the plant is called the crown. This is important because it's where all future growth of shoots and roots will come from.
