These beets were taken out of the greenhouse and planted outside. When transplanting beets cut off the larger beet green leaves and cook. That takes the stress off of the transplanting the plants. Then cut beet green tops as need until you are ready to harvest the beets. I left some beets so I could keep cutting the greens for later use. Make sure to give growing room for the beets so they don't grow together.If you don't want the beets to bleed into the water leave the root and an inch of the top with the beet. We drink the beet juice so any bleeding into the water we will drink. Leaving the root on the beet makes it easier to scrap off the skin when the the beet is hot.
