Does it have to be a boss relevant to your level? I'm stuck on Old Demon King and I need some Embers to help out. Can I just go to like the earliest bosses?

Thanks i bought dark souls only to help my best friend and play with him because we live far apart. When we got it i was worried we wouldnt be able to hang out as much because of the stupid embers. This will help us hang out much more often!
