Better to bake, not fry if possible. It cuts down on the carcinogens.

I never use olive oil to fry because it loose all its nutritional value.

When you heat up olive oil you make it as carcinogenic and as devoid of all useful nutrients as the usual refined oil is. You actually turned something that was originally healthy into poison, if you don't mind me saying.
